今回は愛媛県宇和島市にある安岡蒲鉾の工場見学をご案内します。

宇和島では古くから愛されているかまぼこは、
地元のエソを利用した郷土色豊かな昔ながらのかまぼこです。


骨が多く、調理しづらいエソを利用することで食品ロスを減らし、地域経済の活性化にもつながっているんです。

工場見学では、魚をさばいている様子からすり身にして成形、そして包装までの過程を見ることができます。

In this video, we'll take you on a tour of Yasuoka Kamaboko factory, located in Uwajima City, Ehime Prefecture.

The factory tour is free, making it enjoyable for everyone, from small children to adults.

In Uwajima, the long-beloved kamaboko is a traditional local delicacy rich in regional flavor, made using a locally sourced fish called Eso.

By using the abundant-boned and hard-to-cook lizardfish, food waste is reduced, and it also contributes to the revitalization of the local economy.

During the factory tour, you can see the entire process, from filleting the fish to making the surimi, shaping, and finally packaging.
